Pour-Over Coffee Guide: Grind Size, Ratio & Technique

Brewing a delicious pour-over coffee at home is one of life’s most rewarding morning rituals. By controlling key variables such as grind size, brew ratio, water temperature, and pouring dynamics, you can extract vibrant floral aromas, delicate fruit acidity, and clean sweetness from specialty coffee beans.

Understanding brew ratio and grind size

The foundation of consistent pour-over coffee is the coffee-to-water brew ratio. A standard golden ratio is 1:15 to 1:17 (for example, 15 grams of freshly ground coffee to 250 grams of hot water). Using a digital kitchen scale ensures pinpoint accuracy from brew to brew.

Grind size controls the extraction rate. For conical drippers like the Hario V60, aim for a medium-fine grind resembling coarse sea salt. If your coffee tastes unpleasantly sour and watery, grind finer; if it tastes unpleasantly bitter and dry, coarsen your grind slightly.

The blooming phase and water temperature

Always use clean, filtered water heated between 90°C and 96°C (195°F–205°F). Lighter roasts benefit from hotter water to extract dense sugars, while darker roasts shine at slightly lower temperatures to prevent astringency.

Start with the bloom: gently pour roughly two to three times the dry coffee weight (about 45g of water for 15g of coffee) evenly over the grounds. Wait 30 to 45 seconds to allow trapped carbon dioxide gas to escape, creating room for smooth, even extraction.

Pouring technique and drawdown consistency

After the bloom, pour in steady concentric circles, maintaining a gentle stream without splashing the paper filter walls directly. Agitate the coffee bed gently to ensure every particle extracts uniformly.

A standard single-cup V60 brew should finish draining completely between 2 minutes 30 seconds and 3 minutes 30 seconds. Swirl the finished carafe gently to oxygenate the brew before pouring into your favorite ceramic cup.
