At first glance, dialing in pour-over coffee can feel like chasing somebody else’s perfect recipe. TuTu dug past the stopwatch obsession and found a more useful approach: establish a measured baseline, taste the result after it cools slightly, and change one variable at a time. ☕
That method is especially useful for coffees described as floral, fruity, chocolatey, spicy or fermented. A recipe that makes one coffee feel bright and clear may leave another thin, sharp or dry. Your goal is not to copy somebody else’s drawdown time perfectly. It is to build a repeatable process that helps you understand what your grinder, brewer, water and coffee are doing together.
Start with a repeatable baseline
Before troubleshooting, remove avoidable guesswork. Use a scale for both coffee and water, grind shortly before brewing where possible, rinse the paper filter, and keep your pouring routine consistent.
A practical one-cup starting point is 15 grams of coffee to 250 grams of water, close to a 1:16.7 ratio. James Hoffmann’s one-cup V60 demonstration uses that dose and divides the water into manageable stages. It gives you a stable routine to practise before you begin fine-tuning.
A broader starting range of roughly 1:15 to 1:17 is also useful:
- Try a tighter ratio, such as 1:15, when you want a more concentrated cup.
- Try 1:16 to 1:17 when you want a lighter concentration or need more water to work through a lightly roasted coffee.
- During early troubleshooting, avoid changing ratio and grind size in the same brew. Otherwise, you will not know which adjustment caused the difference.
The key is repeatability. Record the coffee dose, water weight and grinder setting. Memory is surprisingly unreliable when several small variables change at once.
A practical pour-over routine
Rinse and preheat
Place the paper filter in the dripper and rinse it thoroughly with hot water. This helps remove papery flavour and warms the brewer and serving vessel. Discard the rinse water, add the ground coffee and gently level the bed.
Preheating is easy to overlook. A cold ceramic or glass brewer can absorb heat at the beginning of the brew, making your starting conditions less consistent from one cup to the next.
Bloom the coffee
Start the timer and pour enough water to wet all the grounds. A useful starting point is around two to three times the coffee dose. For 15 grams of coffee, that is approximately 30 to 45 grams of water; Hoffmann’s demonstrated recipe uses 50 grams.
Let the bloom rest for roughly 30 to 45 seconds. The aim is full, even wetting rather than an impressive rise. Very fresh coffee may release more gas and benefit from a little more time. A gentle swirl can help reach dry pockets, but aggressive stirring may move fine particles toward the filter and slow the later drawdown.
Pour in controlled stages
After blooming, add the remaining water with a steady, gentle pour. Pulse pouring is easy to reproduce: add a measured amount, pause briefly, then continue. Hoffmann’s 15-to-250-gram routine uses four further 50-gram pours.
Keep the kettle spout reasonably close to the coffee bed. Pouring from excessive height can create more agitation than intended. Try to wet the bed evenly without repeatedly blasting the paper wall.
There is no need to make the pour theatrical. Consistency and even saturation are more useful than drawing a perfect spiral.
Let it draw down, then taste
Allow the coffee to drain, gently swirl the brewed coffee in the server or cup, and taste it after it has cooled a little. A level bed is a useful observation, not a final score.
Drawdown time can reveal changes between brews, but flavour remains the primary feedback. If two cups finish at different times yet one tastes clearly better, the more enjoyable cup is the useful result.
Use grind size as the main dial
Grind size is normally the clearest first adjustment. Finer grounds expose more surface area and usually increase extraction. Coarser grounds generally reduce extraction and allow water to pass more quickly.
Start around medium-fine for a V60-style brewer, then respond to flavour:
- If the coffee tastes sharply sour, thin or unfinished, move slightly finer.
- If it tastes harsh, bitter, drying or astringent, move slightly coarser.
- Make small changes rather than jumping several grinder settings at once.

A very slow drawdown may indicate a grind that is too fine, a grinder producing many fine particles, or excessive stirring and swirling. An unusually fast drawdown can point toward a grind that is too coarse for the balance you want, although taste should confirm the diagnosis.
Match water temperature to the coffee
Water temperature affects how readily soluble material moves from the coffee into the brew. It is a useful adjustment, but not a magic correction for every problem.
For a light roast, start toward the hotter end of the normal brewing range. Hoffmann uses freshly boiled water in his light-roast demonstration, while Lance Hedrick’s flexible pour-over guide discusses hotter water as one way to support extraction in lightly roasted coffee.
For a darker roast, a moderately lower temperature can be worth testing if the cup repeatedly tastes roasty, bitter or excessively dry. Keep the change small and leave the grind setting alone for that test. This makes the result easier to interpret.
If the coffee still tastes both sour and bitter, temperature may not be the main problem. Uneven saturation or channeling can create a mixture of under-extracted and over-extracted flavours in the same cup.
Brew ratio changes concentration: how strong or light the coffee feels. It can also influence extraction because additional water continues to contact the grounds, but strength and extraction are not identical.
If a cup tastes balanced but too intense, keep the grind constant and try slightly more water. If it tastes pleasant but too weak, use slightly less water. Hedrick’s guide is valuable here because it treats ratio, temperature and flow as separate tools rather than one fixed recipe.
A coffee can be weak and over-extracted, or strong and under-extracted. Do not diagnose the entire brew from strength alone.

These are starting hypotheses, not guarantees. Coffee, grinder burrs, filter paper, dripper geometry and water composition can all change the result.

Begin with James Hoffmann’s “A Better 1 Cup V60 Technique” for one structured recipe to repeat. Around 05:34, focus on the staged pours and the restrained use of agitation.
Next, watch Lance Hedrick’s “ULTIMATE POUROVER RECIPE (any method)” from about 04:05. It is the better companion when your coffee or equipment differs significantly from the recipe you started with. Look for the relationship between roast level, ratio, bloom, temperature and flow.
Finally, use Coffee & Cocktails’ “Building a pour over recipe” from 05:53 as a troubleshooting framework. Its one-variable-at-a-time approach prevents the common mistake of changing grind, temperature, ratio and pouring style together.
Take short notes and keep the useful changes
For each bag, record the dose, water weight, grinder setting, water temperature, bloom time, approximate drawdown and a few flavour observations. You do not need laboratory precision. A note such as “slightly sour when hot, sweeter after cooling; try one click finer” already gives the next brew a clear purpose.
One last editor’s note: the best dialled-in pour-over is not necessarily the longest, strongest or most technically elaborate one. It is the repeatable cup that presents the coffee clearly and tastes good to you.
